I’ve never heard of him

There are many unsung heroes in history – people ¹_____ names have been completely forgotten. One of them is, without question, Fred Harvey, an entrepreneur who was born in England in 1835, but went to live in the United States when he was only seventeen. After working in restaurants and shops in New York and New Orleans, Harvey signed a contract with the superintendent of the brand new railroad which was under construction in the south-western United States. ²_____ permitted him to open restaurants along the railroad to cater for its many passengers. ³_____ the end of the nineteenth century his company had built over eighty restaurants, known as Harvey Houses, across America, and they were incredibly successful.

The reason ⁴_____ Harvey is one of the great unsung heroes of history is the fact that he had created the very first restaurant chain. His restaurants were all beautifully designed, ⁵_____ in the mission revival style, but they shared similar menus, and they all employed young women aged between 18 and 30 to work as waitresses. These women wore a uniform and lived in housing complexes next to the restaurants, ⁶_____ they were strictly supervised. Indeed, they were not allowed to get married until they had worked for the company for a year. Today, the idea of controlling the lives of employees in this ⁷_____ seems shocking, but the idea of having a chain of restaurants with similar interior décor, identical menus and staff in uniform is very familiar. Without Harvey, there would be no McDonald’s, no Starbuck’s and no TFI Fridays. He was the pioneer of the restaurant chain.
