MY FAVOURITE UKRAINIAN DISH
My favourite Ukrainian dish is deruny. Deruny is a traditional Ukrainian dish made of potato which
can best be described as small potato pancakes fried in oil and served with sour cream. If you never try this local specialty you will not truly appreciate what potato means to Ukrainians! First you grate several potatoes and make them into a liquid pulp. To this you add some salt, one or two eggs, one spoon of flour and then fry the mixture in a pan, thus creating small pancakes. Deruny can be cooked and filled in different ways though the basic recipe, including sour cream, remains the same. Deruny filled with meat and curd (or cottage cheese) and served with fried mushrooms are particularly good. You can put prepared deruny into a pot and top it up with butter, fried onion or mushrooms. The effect of this is enhanced if the pot is then placed into a hot stove for a couple of minutes. This keeps deruny hot for a long time. Enjoy your meal!
In the town of Korosten, Zhytomyr Region, the annual International deruny festival is held, and the local community has even erected a monument of their favourite dish.

BORSHCH
If you ask any Ukrainian to name a few traditional dishes, the list will certainly include borshch - the most popular Ukrainian dish. This thick delicious soup is prepared with variety of ingredients, including meat, carrots, cabbage, beetroots and potatoes. 
This is the recipe for preparing borshch. Put the chopped beetroot, carrots and green beans into a saucepan with 2 litres of water and cook for a while. Then add the rest of the vegetables, dill and salt and cook until vegetables are tender, adding more water if necessary. Fry the finely chopped onion in oil in a small frying pan. Stir until smooth. You use this to thicken the soup, add this to the borshch when the vegetables are cooked. Add some sour cream and freshly chopped garlic and cook for about 5 minutes more. Adjust seasoning if necessary. Serve.
Put the steps of the recipe in the correct order.

Add the rest of the cabbage, potatoes, tomatoes, onion and dill and let them cook._

SALT AND OUR DIET
Life depends on it as much as on oxygen. Human beings and animals need salt for the proper functioning of their bodies. But it is strange to think that a mineral as cheap and commonplace as has played such an exotic and dramatic role in history. Salt sparked off wars in 250 BC, it caused North American Indians to hand over land and furs to European settlers, and in Tibet, Ethiopia and Rome it was so highly valued that it became a form of money.
People were not aware of just how much they needed salt until they discovered that it had a very practical use. If meat or fish could be kept in a barrel of salt, or brine, the food could be stored for months without it going bad. So salt became very valuable, and demand began to exceed supply. For Julius Caesar, the news that there was salt in Britain provided a good reason for invading the country. And Roman soldiers were even paid in salt, so it is the origin of the word salary.
It is hardly a great surprise, then, to find that salt – like gold – acquired magical properties, and stories and superstitions grew up around it. Primitive people put it on the head of an animal that was to be sacrificed to the gods, babies in medieval Europe were washed in salt water and children made to wear little bags of the stuff around their necks to keep them from harm.
Even today, in many countries, the accidental spilling of salt still makes people throw a pinch of salt over the shoulder to counteract bad luck – just in case there is some truth in it.

You need to get into a routine with your meals. Pan for them and don’t skip any of the three meals you need. You may also want to include a snack or two in your daily eating routine. Always go with fresh foods as much as possible. They are loaded much more with the stuff that keeps you healthy. “Foods” found in bags, boxes or cans have been altered and highly processed, making them empty of the essential nutrients you need.

Instead of reaching for a cookie or candy bar, ask yourself what’s eating you. Are you feeling stressed, pressured, hurt, depressed, anxious or bored? Try not to stuff down your feelings. Only use food for what it’s meant to be used for – fuel for your body and mind and that’s it.
